Ingredients:

  • 4 lb. conch or whelk, fresh or frozen
  • 4 shallots, chopped
  • 12 garlic cloves, chopped
  • 4 tsp. kosher salt
  • 4 vegetable bouillon cubes
  • 2 tsp. ground allspice
  • 2 tsp. ground black pepper
  • 8 oz. olive oil
  • 8 shallots, chopped
  • 8oz. tomato paste
  • 8 cups water
  • About 10 thyme sprigs
  • 4 habanero or Scotch bonnet peppers (optional)
  • Juice from 2 lemons
  • 4 tsp. kosher salt
  • 4 tsp. ground black pepper
  • Lemon Juice from 2 limes and or sour orange

Instructions:

  1. Gently clean the conch meat by removing the exteriors and discarding its digestive tracts.
  2. Cut it into bite-sized portions, and set aside.
  3. In a large saucepan, heat some olive oil over medium heat;
  4. Then add diced onions, bell peppers, minced garlic, and other spicy seasonings;
  5. Saute until tender before adding conch pieces to be cooked
  6. Fished out any thyme leaves + salt+ pepper and – if used- one of those fiery Scotch Bonnet Peppers!
  7. Bring it all to a boil, then reduce the intensity to low, simmering for 1 hour.
  8. Occasionally stirring so no speck of debris gets left behind!
  9. Remove the scotch bonnet pepper before serving.

Tips:

  • You can purchase conch from seafood markets or online retailers.
  • Ensure to remove all of the meat’s grime before cooking. If you cannot access scotch bonnet peppers, substitute with habanero peppers if possible.

Instant Pot Haitian Lambi stew

On the instant pot, click on sautee and set it to 30 minutes. Incorporate oil, shallots, and potato paste into the mix.
 
Next, combine the conch with its marinating ingredients. Mix thoroughly until all of them have been incorporated. 

Then add water with thyme, salt, ground pepper, and bouillon cubes; stir well to ensure that everything is evenly distributed among the mixture before serving up your conch stew!
 
Flip the knob to sealing, then press Cancel on your instant pot. Select Pressure Cook mode and set it to high for 1 hour and 30 mins; afterward, you can release any remaining pressure by opening the valve if desired.
